Flat Iron Steak has been chosen by many chefs as the perfect meat for a true American steak. The flat iron is cut from the sucade. This is ‘split’, which means that the string is cut out and beautiful steaks are cut. The meat is tender and nicely marbled and therefore has a lot of flavour. Grilling briefly and serving red gives the best results. Of course delicious with only salt and pepper, but also try a rub with which you rub the meat.
