WHISKEY GLAZED SMOKED HAM

Ingredients

  • FOR GLAZE
  • Serrano Chilies – 3 finely diced or your favorite chili pepper
  • Whiskey – ¼ cup
  • Apricot Marmalade – 10 oz you could also use orange marmalade
  • Molasses – ¼ cup
  • Soy Sauce – 3 Tbs
  • Brown Sugar – 2 Tbs
  • Iron Pot
  • FOR THE HAM
  • Wet Cured Ham – around 17 ibs (this is not a precooked ham)
  • Your Favorite Pork rub or you can use one of ours found at this link.
  • Pineapple Rings – 1 can
  • Toothpicks
  • Apple Juice – you can substitute with water or beer
  • Roasting Pan
  • Roasting Rack that fits inside roasting pan

Instructions

  1. DIRECTIONS
  2. GETTING READY
  3. Set up your grill for indirect heat (hot coals on one side of the grill and no coals on the other side of the grill) – You’re looking for a temp. Between 300 to 350 degrees Fahrenheit.
  4. MAKING
  5. THE GLAZE
  6. Place your pot on the grill directly over the coals
  7. To the pot add
  8. Serrano Peppers – 3 finely diced
  9. Whiskey – ¼ cup
  10. Apricot marmalade – 10 oz
  11. Molasses – ¼ cup
  12. Soy sauce – 3 Tbs
  13. Brown Sugar – 2 Tbs
  14. Stir and simmer
  15. Remove from the grill and set aside
  16. THE HAM
  17. Liberally coat the whole ham with your favorite pork seasoning
  18. Place the Pineapple rings on the ham holding them in place with the toothpicks
  19. Place your roasting pan with the rack inside, on the side of the grill with no coals
  20. Put your ham into the pan
  21. Pour enough apple juice into the pan to cover the bottom
  22. Cover the grill with the lid – you are looking at about a 5 hour cook time depending on the temp of your grill
  23. After 1 Hour
  24. Brush a layer of glaze onto the ham
  25. After 2 ½ Hours
  26. Rotate the pan 180 degrees so the ham cooks evenly
  27. Apply another layer of Glaze
  28. Every 45 minutes to 1 hour after this apply another layer of glaze
  29. When the internal temp of the ham reaches 160 degrees Fahrenheit (about 5 hours) Remove the ham from the grill
  30. FINALIZING
  31. Let the ham rest for 20 minutes – to let the juices redistribute throughout the ham
  32. Slice the ham and put with your favorite fixins
