Sex weighs a wild hare between 2 and 3 kilos. The color of the flesh is brownish red, it is tender and has a somewhat sweet game flavour. You can roast a fillet in its entirety. However, it is easier to divide the hare into back, hind and forequarters. The leftovers, the so-called parures, can be used excellently for a stock. Together with the front legs, they are also very suitable for a stew.
