Seaweed bacon is made from the pork belly.
It is stripped of bones, rind and other iniquities and then pickled. The belly is rubbed with a marinade of soy sauce and spicy herbs such as paprika, curry and pepper. Then the seaweed bacon is vacuum pulled so that the marinade can soak into the meat well.
In the same bag, the belly is cooked.
After cooling, the belly is cut into pieces and sold fried.
