An absolute summer topper: Pork belly burned ends.
Simple to make and horribly delicious!
Apart from this package, you also need:
A bbq, coals, aluminum tray / foil, butter and some bastard sugar.
Prepare your bbq for indirect bbqing at about 130 degrees. Remove the rind from the pork belly, remove any rib tips (cartilage) and cut into 5 cm blocks.
Season the meat with the rub and put it on a grid, and add some smoke shavings on the coals. not too much, personally I don’t like too smoky.
After 2 to 3 hours, when the bacon has a nice color, remove them from the bbq and place them in an aluminum or oven dish, sprinkle with bastard sugar and add butter and some of the sauce.
Cover the dish with aluminum foil and put it back on the bbq for 1.5 to 2 hours. After about 2 hours, remove the dish from the bbq and drain the fat from the bacon cubes and add enough sauce that the cubes are covered on all sides covered with the sauce, set them back for another 15 minutes and enjoy.
