This pork fat, also called lard, is located in the abdominal cavity.
The fat is soft and white in color. It used to be commonly used for baking and deep-frying.
Today it is almost completely processed. It is still available as melted lard in several traditional butcher shops.
It is rarely used as a seasoning in winter meals.
