Christmas package or a nice gift. Characteristic of a ‘half-and-half’ roulade is the combination of beef and pork. It is very important that the most tender meat is inside the roulade. That way the roasting can be done evenly. In general, the butcher uses tender beef on the outside and pork fillet or pork tenderloin (more expensive) on the inside. The pork fillet is seasoned all around and the thin piece of beef only on the inside. The whole is then rolled up and tied up tightly with roulade twine. The roulade is best enjoyed by slowly cooking it in the oven.
Roulade weighs 1.5 kilos and will be delivered vacuum packed in a box on collection, vacuum delivered in a cool box when shipped.
