The shoulder mouse or Chuck tender is an elongated pointed muscle that lies under the shoulder blade. Characteristic is the thin round that runs through the middle. The shoulder mouse is very lean and, depending on the type of slaughter animal, can be used as roast beef or roast, baking and/or steaks.
