Reduced pieces of meat that vary in meat/fat % according to the customer’s purchase specification. 90/10, 80/20 etc.
Way back in the day, butchers made minced meat “Wednesday mince day” from small pieces of meat that are always created earlier in the week when boning, cutting and portioning the larger cuts. The origin of these pieces is varied and therefore also different in structure, taste and tenderness.
Grinding and mixing creates a homogeneous product.
Properly considered, the obsolete pieces of meat = too small or shapeless to cut into a piece = the basis of the minced meat.
Size of the pieces of meat varies from small to fist-sized. The chips may have been machine pre-shredded.
