A bottom round roast is the flat bill in Dutch.
This large piece of beef comes from the hindquarter and is usually used to prepare roast beef that serves as a spread. The meat has a coarser thread than the hind mouse and has a somewhat more angular model.
A thick and heavy string (tendon) runs along the side that cannot be cooked and must therefore be removed.
