A bottom round roast is the flat bill in Dutch.
This large piece of beef is cut from the hindquarter and is usually used to prepare roast beef as a sandwich filling. The meat is somewhat coarser in grain than the hind leg and has a more angular shape.
A thick and heavy string (tendon) runs along the side that cannot be cooked and must therefore be removed.
