The Blade Steak is a steak that is cut from the pork shoulder and this steak is less ‘cleaned’ than a schnitzel. The slab is also a bit thicker and not flattened. That is why this steak is richer in taste. It is also often referred to as ‘farmer hamlap’. The bacon will make the ham steak less dry. You can bake it excellent in the frying pan, but also on the barbecue.
