Beef liver is organ meat that used to be preferentially fried and eaten as a remedy for anemia.
Beef liver should not be fried too hard and for too long, otherwise it will become quite dry. The liver is therefore often laced (larded*) with strips of fresh fatty bacon.
Nowadays beef liver is only sold as a sandwich filling.
Use product within 2 days otherwise freeze immediately.
Rinse well with cold water before use.
